Description
Raclette is a semi soft, pungent, "stinky" French melting cheese that is traditionally melted and scrape over boiled or steamed new potatoes and cornichons.
 
Pairings
Dry white wine, try with a Sauvignon Blanc or a Pinot Gris
 
​Uses
Warm the whole piece over very gentle heat, scrape the melted layers over new potatoes and serve with cornichons.

    Unique taste, but watch out for the smell!

    I used this to make the traditional raclette dish, as well as tried it as a substitute in a fondue recipe. Not sure what else it might be good for, but both were enjoyably flavorful experiences. However be forewarned, this is a very aromatic cheese, and will stink up your kitchen!

    Delicious and unexpected

    Having seen raclette dyring my travels in France, I was incredibly curious to try this when I found it kosher. It is quite stinky upon unqrapping but melts into an exquisite, creamy dream. Delicious over tiny steamed potatoes and veggies alongside cornichons and olives. Just ordered some more!

    We were unfamiliar with this cheese. Described as "stinky" and served melted over veggies, we found it quite tasty, less strongly flavored than we expected. We will order again.
