Aged Asiago is mild, mellow and aged (9 months). It is hard and nice for grating. It is a slightly sweeter, smoother and nuttier cheese than parmesan.

I always buy from them. They are so easy to work with and a great family. The cheese is really good but the most outstanding cheese I had is the provolone. The flavor is much more than mild but less than an overly sharp cheese.
