Feeling blue: taste = okay; presentation -- not so much...
First off, in terms of taste, this is a very mild expression of blue cheese. The decision to utilize part-skim as the base (as opposed to whole milk) does not help. The flavor derives more from the salt than the "funk"... Secondly, in regards to presentation, this is a miss for me. Instead of rich veins of mold, the fungus in my wedge clearly never propagated past the inoculation point, so if I cut against the grain I see a uniform dispersion of polka-dot puncture marks, and if I slice it the other way there are unsightly striations. I guess this would be suitable for making bleu cheese dressing, but not for service on a cheese plate. I tried it mixed into sour cream as a dip, as well as eating plain along with fruit & sweet dessert wine. In either instance, it sadly failed to delight...
