Doesn't taste aged....
I've had a number of aged cheeses, parmesan, cheddar, Gouda, and even other aged Havarti (Castello brand) and sadly this cheese did not perform. I LOVE Castello aged havarti (also aged 12 months) and it is a slight harder cheese with a crisp aged bite. This cheese tastes like regular havarti. There are no cheese crystals and it's very soft. It tastes just like any other normal, creamy, havarti. I mean, it's good cheese, but if you're looking for an aged cheese 'bite', look elsewhere.
