Manchego is a traditional hard sheep milk cheese, made in the La Mancha region of Spain.  This batch is aged for over a year, is firm, well balanced, nutty and buttery.

Great with Tempranillo or Rioja Spanish red wines.

Try with "Fine Pairings" fig preserves, Marcona almonds or honey

    Not worth the extra aging, IMO...

    With the extra aging, I was expecting Manchego "dialed up to 11". It was not bad, but not appreciably different than the regular version -- perhaps a bit more pronounced flavors...
